Fries are everyone's favorite. But i really don't like fries when it is greasy. Baked fries are a good alternative if you don't like deep fried fries. I have tried baking of Potato fries at different temperatures with various timings. But still I felt the crispiness was missing. Finally after a lot of trial and errors I managed to find a method to bake crispy fries. I like to serve these fries as a side to sandwiches or burgers. The art of good baking lies in understanding your oven which comes only by experience after a couple of trial and errors.

Ingredients
Potatoes - 2 big (sliced into thin and long pieces - I don't peel the skin of the potato, why waste the nutrients on the skin)
Olive oil - 4 tablespoons
Garlic - 3 cloves (minced)
salt - to taste
dry oregano - 1 tablespoon
Method
1. In a large bowl add the sliced potatoes, olive oil, salt, minced garlic and oregano and mix well.
2. Take a baking tray and line it with parchment paper. I always like to line my baking tray with parchment paper as food does not stick to it and makes washing easy. Place the cooling rack on top of the baking tray.
3. Now arrange the potatoes on top of the cooling rack in such a way that the potato slices do not overlap as shown in the figure below.
4. Preheat oven to 375F and bake the potatoes for 20 mins.
5. The potatoes start to get golden and are cooked. You can test if the potato is cooked by smashing a piece of potato. The cooked potatoes look as shown in the figure below.
6. Let the potatoes cool down to room temperature.
7. Now Preheat the oven to 450F. Bake the potatoes again to crisp up for about 10 to 15 mins. Keep an eye on the oven to make sure you don't burn the potatoes. Serve hot.
