I love potato cutlets. Its one of my favorite. Its a very famous evening snack and so yummy. Usually potato cutlets are deep fried but I am too lazy to do any deep fried dishes. Its complicated and unhealthy. So i decided to pan fry the cutlets. So One day I was thinking - how about convert the evening snack to a dinner, then I got the idea of combining it with a salad.Thus came the potato cutlet salad.

Ingredients
Potatoes - 3 (boiled) - You can also include boiled carrots and peas
Onion - 1 (chopped)
Cumin Powder - 1 tablespoon
cilantro - 1 tablespoon (chopped)
Canola Oil - to panfry
White Flour (Maida) - 1/4 cup
Breadcrumbs - 1/2 cup
Chilli Powder - 1/2 tablespoon
salt - to taste
Salad (green leaves, carrots, lettuce, pomegranates, oranges etc)- 1 large bowl which serves two people
Ranch Dressing (Any salad dressing of your choice) - 1/4 cup
Method
1. Add a tablespoon of oil and saute the onions. Then add the boiled potatoes and mash them. Then add the cumin, salt and cilantro and cook for 2 minutes. Allow it to come to room temperature
2. Make small burger cutlets from the potato mixture.
3. Mix flour and some water to form a batter in a bowl.
4. Mix breadcrumbs and chilli powder in another bowl.
5. Dip the cutlets in the flour batter and then dip it in breadcrumbs mixture.
6. Pour some canola oil in a hot skillet to panfry.
7. Panfry the cutlets and drain the excess oil with a tissue.
8. Mix the salad and dressing in a bowl and top it with the potato cutlets. It is ready to eat. The crispy cutlets with the salad leaves is delicious.
