Chinese Cauliflower Stir Fry

Cauliflower is a favorite vegetable for most of us, especially in the form of Gobi Manchurian. I love Gobi Manchurian. When I go to Indian Restaurants I would love to order that. So i thought about this simple and healthy way of making cauliflower stir fry which shares the taste of Manchurian. It has a hint of Chinese flavor because I will be using Soy Sauce and Sri Racha.

Ingredients

Cauliflower - 1 small (cut into florets)
Onion - 1 small (finely chopped)
Garlic -  1 tablespoon (minced)
Ginger - 1/2 tablespoon (minced)
Tumeric powder- a pinch
Canola Oil - 2 tablespoons
Soy Sauce - 2 tablespoons
Ketchup -  4 tablespoons
Hot Sauce or Red Chilli Sauce - 2 tablespoons (I used Sri Racha)
salt - to taste

Method 

1. Boil water in a pan and add salt and tumeric powder. Now add the caulifower and boil for 10 mins until the cauliflower is half cooked.
2. Drain the cauliflower and mix it with 1 tablespoon of canola oil. Arrange it in a baking sheet as shown below.

3. Bake the cauliflower at 425F for 25 mins until it slightly starts to roast as shown below.

4. Add a tablespoon of canola oil in a hot skillet and saute the onions, garlic and ginger for 8 minutes. Now add the soy sauce, ketchup and Hot sauce and cook for 3 minutes. Now add the baked cauliflower and toss in such a way that the sauce coats the cauliflower. Serve hot with fried rice.
