Creme Corn

Once I had this creamy cup corn from a road side shop and fell in love with it. I am not sure about the ingredients used by the road side shop. But I decided to make my own version of it at home with some ingredients that I had at home and it was delicious. How simple can it get? You will see!!!! I decided to use fresh corn. I know it is a little extra work in removing the husk and the corn kernels, but it is not a big task. If you use frozen corn or canned corn then be prepared to compromise on the freshness and the taste. The fresh corn tastes way much better.



Serves : 1 (I thought it will serve two people, but it was too delicious and I ate it all)

Ingredients
Fresh Corn - 3 (or a cup of frozen corn)
Butter - 1 tablespoon
Lite Mayo - 2 tablespoons
Lite Sour Cream - 2 tablespoons
Shredded Melting cheese (like cheddar, mozzarella, pepper jack) - 2 tablespoons
Pepper or Chilli Powder - 1 teaspoon (I used chilli powder as I like it more than the pepper flavor)
Lime - 1/2 (freshly squeezed)
Salt - to taste
Cilantro - for garnish

Method

1. First step is to remove the corn kernels from the fresh corn by following steps 1 and 2. Remove the husk and silk from the corn. Then wash the corn.
2. Place a small bowl inside a large bowl. Now hold the corn vertically with top end touching the small bowl. Now shave the corn kernels with a knife. Discard the corn stem after shaving the corn kernels. Remove the small bowl.(Ensure this small bowl is very much smaller than the large bowl else it will be tough to take it out after the core gets collected in the gaps between the two bowls.) The corn kernels are collected in the large bowl.

3. Transfer the corn kernels into a baking dish. Cover it with Aluminum Foil.


4. Preheat the oven to 375F. Place the baking dish covered with foil into the oven and bake for 30 minutes. This will steam the corn. Take out the baking dish after 30 minutes and remove the aluminum foil and check if the corn is cooked.
5. You can skip all the above steps if you use frozen corn. If you use frozen corn, cook according to the instructions on the package and follow the procedure below.
6. Now in the hot corn add butter, sour cream, cheese, mayo, salt and chilli powder. Mix well with a spoon. Since the corn is hot the butter and cheese melts very well and brings out a wonderful flavor. Then add the lime juice and mix well. Garnish with cilantro.
7. Serve hot. It is very important to serve this dish hot. It tastes better if it is served immediately.
