Green Bell Pepper Spinach Saute

I wanted to make a quick vegetable side dish on a lazy Saturday afternoon. Then I came up with this recipe which includes green bell peppers and spinach. I put least efforts for this dish and my hubby loved it. So that's the reason I decided to blog this dish. The iron rich spinach is my favorite either cooked or in salads. The green bell peppers are loaded with phyto nutrients and are very good antioxidants. Wow, what a healthy combination? The best part is - it takes only 10 minutes to prepare this dish.


Serves : 2
Approximate Total Cost : $1.50

Ingredients

Olive Oil - 1 tablespoon
Green Bell Pepper - 1 (chopped into thin long slices)
Spinach - 2 cups (2 handfuls of leaves)
Chilli Powder - 1/2 or 1 teaspoon (You can use pepper instead)
Salt - to taste


Method

1. In a hot skillet, add a tablespoon of Olive Oil.
2. Add the green bell peppers and saute them for 5 to 7 mins. Ensure that the green bell peppers are cooked but still slightly crunchy. Add salt and chilli powder and cook for a minute.
3. Then add the spinach leaves into the skillet and cook for another 4 minutes. Serve hot. You can serve it as a side for dal rice or tortillas(chapatis) or just eat it like that.
