One of the healthy way to eat potatoes is by baking them. I just love them especially with great toppings. It's easy to make but takes some time to cook. Even though the cooking time is close to one hour, the preparation time is just five minutes.You can serve it as an appetizer or a side or even for dinner.

Ingredients
Russet potatoes - 2 (medium size)
Canola oil spray
Salt - to taste
Toppings
Sour cream lite - 4 tablespoons
Low fat butter - 4 tablespoons
Part skim shredded mozzarella cheese - 4 tablespoons
Shredded Pecorino Romano or Parmesan cheese - 4 tablespoons
Spring Onions- 4 tablespoons (chopped)
Tomato - 1/2 (finely chopped)
Pepper - to taste
Salt - to taste
Method
1. Wash the potatoes well and cut off the zits if any. Dry them with the help of a tissue.
2. Make three to four pierces on the potatoes with a fork or knife to allow the steam to escape while baking.
3. Place a rack on the baking sheet.
4. Place the potatoes on the rack and spray oil and sprinkle salt. If you don't have a rack just place the potato in a baking sheet and bake them.
5. Preheat oven to 400F. Bake the potatoes for 50 to 60 minutes.
6. Take out the potatoes and cut it in the middle lengthwise and push with your fingers from the side.
7. Top each potato with a tablespoon (or more - depending on your taste) of butter, salt, pepper, pecorino Romano, mozzarella, sour cream, tomatoes and spring onions. Serve hot. When ready to eat mix all the toppings with the fluffy potato using a fork and dig in :).
