Red Bell Pepper Quinoa Salad

Quinoa is very nutritious grain but not very much on the tastier side for me. It has protien, iron, dietary fiber and calcium too. Its a healthy choice .So I try to spice it up with some chilli powder and Red Bell pepper. I like to serve quinoa with Black ChickPeas Masala (Kala Channa Masala) which makes it tastier and more nutritious. So what is more healthier than a salad rich in protein.

Ingredients

Quinoa- 1 cup
Water - 2 cups
Chilli powder - 1/2 teaspoon
Onion - 1 (chopped)
Red Bell Pepper - 1 (Chopped)
Cucumber - 1/2 (chopped)
Canola Oil - 1 tablespoon
Cilantro - for garnish
Salt - to taste

Method
1. Wash the quinoa and add 2 cups of water. Add the chilli powder, salt and mix well. Initially allow it to boil and then cook in low flame. The quinoa is perfectly cooked after all the water evaporates. Check the cooking instructions on the quinoa packet to cook it perfectly.
2. In a hot skillet saute the onions and red bell peppers with little bit of oil.
3. Once the quinoa is cooked, transfer it to a bowl. Add the sauteed onions and red bell peppers to the quinoa. Also add the cucumbers. Fluff the quinoa with a fork as it is a fine grain and you dont want to smash it. Garnish with cilantro.
4. I would suggest you to serve the quinoa with Black ChickPeas Masala (Kala Channa Masala) as a side to satisfy the spicy tastebuds.
