One of my favorite dish is Pepper Cabbage especially when my Mom makes it as a side dish for chapati. Leafy green Cabbage is very healthy and its good if we include it in our diet in some form.
This is a quick dish which doesn't require long cooking time. It serves as a side dish for Chapatis(Wheat Tortilla) or Rice.

Ingredients
Onion - 1 (finely chopped)
Tomato - 1 (finely chopped)
Cabbage - 1 pound (roughly chopped into small cubes)
Pepper - 1 tablespoon (freshly ground)
Canola oil - 1 tablespoon
(Optional)
Mustard seeds - 1/4 tablespoon
Cumin seeds -1/4 tablespoon
Urad dal - 1/4 tablespoon
Dry Red Chilli -1
Method
1. In a skillet add 1/2 a tablespoon of canola oil.
2. Add mustard seeds, cumin seeds, Red chilli and Urad dal once the oil is hot. Mix well for 1 min. You can skip this step if you dont use these ingredients.
3. Add the onions and tomatoes and saute well for 5 mins.
4. Add the cabbage and saute in a slightly high flame (7). This causes the cabbage to cook fast and turns slightly brown. Add a pinch of salt, pepper and saute for another 15 mins lowering the flame if required. You can add more pepper if you want more heat. Keep stirring continuously to avoid the cabbage sticking to the bottom of the pan since we have added very less oil.
5. Once the cabbage s cooked transfer it into a bowl and serve.
