Grilled Veggie Sub

Most of the times we are tired from the day's work to cook dinner. Moreover we are tempted to grab takeouts. But if you just take a moment to think about eating healthy and saving money it would not take too long to make a great simple sandwich. We can make sandwiches in numerous ways, so I try some of my own creative versions of sandwiches. One such sandwich is this Grilled Veggie Sub.



Serves : 2
Approximate Total Cost : $5.50
Approximate Cost per person : $2.75

Ingredients

Wheat Sub  (6 inch ) - 2
Spinach leaves - 1 cup
Green bell pepper - 1 (thinly sliced)
Red bell pepper - 1 (thinly sliced)
Cucumber - 1 (peeled and sliced into thin circles)

For the Caramelized Onions(Optional)
Onion - 1 (thin long slices)
Chilli powder - 1 teaspoon
Olive Oil - 1 teaspoon

For the Sauce:
Lite Mayo - 4 tablespoons
TIP* Choosing Lite Mayo definitely helps us on cutting down those extra calories
Lemon juice freshly squeezed - 1 tablespoon
Hot Sauce- 1 tablespoon  (I used SriRacha Hot Sauce)

TIP*  I use either Lite Mayo or Part Skimmed Cheese in my sandwiches. Since I am using a Lite Mayo dressing I decided to skip the cheese. It helps to cut down some fat in my daily diet.

Method

1. Mix Lite Mayo, Lemon juice and Hot Sauce in a small bowl to make the Mayo Sauce.
2. In a pan add the olive oil and cook the onions with a pinch of salt in medium flame for 5 mins. Now add chilli powder and cook for 10 mins until the onions turn brown and are caramelized. (If you feel you don't have enough time you can skip this step. But remember its worth the effort because the caramelized onions adds a spicy kick with flavor)
3. Open up the Sub by cutting it horizontally to place the stuffing. Apply the Mayo Sauce on the inner top and bottom part of the sub.
4. Stuff the sub with a layer of cucumber slices, green bell pepper slices, red bell pepper slices, Spinach Leaves and Carmalized onions.
5. Grill the sub in a panini maker. I find that grilling the Sub makes it very tasty and gives the feel of a grilled sandwich.
