Bitter-gourd is a very healthy and nutritious vegetable even though it has a bitter taste. I always buy it when it is fresh in the Indian Store. Most people don't like to eat it because of its bitter taste. But Bitter-gourd fry is a good way to consume bitter-gourd if you don't like its bitterness. People have eaten it from my fridge and asked me "This is so tasty! What is this?". They get an unbelievable reply that it is bitter-gourd.

Ingredients
Bitter Gourd - 2 (chop into small cubes, remove the seeds if they are too big)
Onion - 1 (finely chopped)
Tomato -1 (finely chopped)
chilli powder - 1/2 teaspoon
Canola Oil - to pan fry
Method
1. In a hot skillet pour some canola oil to pan fry the bitter-gourd cubes. TIP* I chose to pan fry rather than deep fry. Once the oil is hot add the bitter-gourd cubes and pan fry them until they are cooked and turn light brown. Remove the excess oil with a kitchen tissue.
2. In the same pan (ensuring that you have only 1 teaspoon of oil left) add the onions and tomatoes and cook in medium flame for 10 mins. Then add the chilli powder and cook for 5 more mins.
3. Switch off the flame and add the bitter-gourd cubes and mix well.
