EggPlant Fry

I love to eat deep fried eggplant masala! It is so tasty! But is there an alternative healthy way!! YES!!
So instead of deep frying the egg plant, I bake it in oven to get the fried texture. I used Japanese eggplant(they are thin, long and purple in color) to make this dish.  Lets jump into the recipe to make Eggplant Fry.

Ingredients

Onion - 1 small (finely chopped)
Tomato - 1 (finely chopped)
Japanese Eggplant - 2 (sliced into small cubes)
Olive oil - 3 tablespoons
Chilli Powder - 1/2 tablespoon
Cilantro - 1 tablespoon(finely chopped for garnish)

Method

1. Toss the eggplant with olive oil and a pinch of salt. Line them in a baking tray as shown in the figure below.

2. Bake for 20 to 30 minutes at 425F, until the eggplant looks roasted. Then allow it to cool. The egg plants look as shown in the figure below.

3. Now in a pan add half a tablespoon of olive oil, onions and tomato and saute them for 10 mins until they are cooked. Add the chilli powder and saute for 5 more mins.
4. Now add the eggplant into the pan and mix well with the onion tomato masala and cook for 5 to 10 mins. Garnish with cilantro.
